Well hello hello hello! Yes, I am back and sorry if I haven’t been able to write for MONTHS! Work got in the way, as well as my newly found hobby: mosaics. I’ve spent loads of my free hours making mosaic stuff, a lot of it for Christmas, leaving me hardly any time to be creative in the kitchen. But I have no excuses now. The recipe I’m sharing with you today is something I wasn’t sure at first. Biscuits usually contain much higher quantities of butter. This is what makes them lovely and rich. But I wanted something with less calories hence I gave these ones a go. I’ve got to say I like them a lot, after the initial “I’m not sure about these”. They are not too sweet and are light and crunchy. Ideal to have with a cup of tea or coffee, without feeling too guilty. I particularly love their lemony flavour, always a favourite of mine. I biscotti salati sono la mia passione. Questi sono grossi ma si possono fare anche piccolini per un aperitivo. A me, devo dire, piacciono anche a colazione. E per una colazione li abbiamo fatti. Per il nostro Guido che mangia sempre salato a colazione. Si conservano diversi giorni e sono meglio mangiati il giorno dopo. Insomma vanno lasciati un po’ lì, come tutti i biscotti con il burro. Ho usato la farina di farro e quella integrale per variare un po’ i cereali che mangiamo ogni giorno. Ma vanno benissimo con la farina normale. Una 0, meglio se biologica. I thought I had already blogged these but I was clearly mistaken as I can’t find them anywhere. Oh well! I must have meant to do it then forgot. Here’s a recipe to use when you have friends descending on you but you haven’t got the time to faff about (the story of my busy life, basically..). As the name suggests they are really quick and really simple to make. Pretty much foolproof, in fact. They come from the River Cottage book Everyday by Hugh Fernely-Whittingstall. Lovely with a cup of tea or coffee! Mine, as you can see from the pic, came out a bit misshapen as I didn’t leave enough space between them. After several healthy, savoury recipes the time has come to blog some naughty sweet treats, namely these oatey, chocolatey biscuits which I made last weekend in a desperate attempt to keep depression at bay. And by the way, don’t worry! The depression was caused by an absolutely atrocious day, weather wise. Nothing else! I kid you not: it could have been November! I know…I know…people in Italy are complaining about the excessive heat (in the high 30s. EEK!). It would seem God can’t get the world temperature quite right. If we could get ten degrees more and Italy ten less that would solve the weather woes, would it not?. 😉 ha ha. Anyway, I was stuck in the house feeling cold and miserable. What better way to keep the blues at bay than bake? I am not one for cookies but I was due to have a meeting with a local group (tea/coffee and biscuits is de rigueur here in the UK whenever there is a meeting) so decided to give them a try. Well…people were very appreciative indeed. Mind you: if the choice is: bog standard bought biscuits (custard creams and the likes) or home made ones it ain’t hard to win the competition. Modesty apart I was pleased with my results: my oaties were nice and crunchy which is just what the doctor ordered in biscuitland, in my humble opinion. They come from the Good Housekeeping website. Hello everyone, just back from my holidays in Slovenia and Italy so I am not quite in the swing of cooking just yet. I am still in a state of thermal shock after diving from 35 plus degrees to 15! Yeek! But that’s England for you. Mind you: I must say it was far too hot on the continent, even for the likes of me! Anyway, yesterday, out of the blue, I decided that the moment had come to try to make some crackers. Eh? Why yesterday and why crackers….? I have never made them in my life. God knows! Still…why not, eh? I like crackers and , let’s be honest, they are better than biscuits, from the point of view of excessive calories. I need to shed some pounds after the strudel excesses I submitted my poor body to in the past few weeks. So no more sweets for a while, and bring in the healthy crackers. I scoured the internet and ended up with a recipe which is a mixture of many. The results were quite promising: a nice , crunchy texture with loads of omega 3 seeds on the top. I went to a wedding today and everyone had to take something for the buffet. I kind of made these up taking inspiration from a Paul Hollywood recipe in which he used dark chocolate and peanuts. Certo, non si tratta della ricetta più dietetica che ho postato. Ma che fare se sono terribilmente buoni e velocissimi da fare? Come resistere alla loro sicura riuscita e al loro burroso sciogliersi in bocca? Hanno un unico difetto. Bisogna essere pazienti: NON mangiarli subito. Aspettare, aspettare almeno 12 ore, meglio 24 o 36. Io per riuscirci ho dovuto farli di nascosto, metterli fuori dalla finestra senza dirlo a nessuno. Solo Laura sapeva…

Vacanze! E allora finalmente ritorno a bloggare. Povera Lucina, lasciata sola a supportare la baracca. Vorrei fare anche qualche proposito per l’anno nuovo, ma è inutile mettersi di traverso se la vita ti trascina vorticosa. Ammaina le vele e lasciati trasportare aspettando che la buriana si calmi.
E’ stata una ragazzina dalle mani di fata a insegnarmi qualche anno fa a fare la gobbetta delle madeleinettes. E ogni volta sembra impossibile, ma funziona! Grazie a Sasha! Oggi ho deciso di profumarle con la lavanda di Elena che conservo gelosamente sottovuoto e che uso con parsimonia (altrimenti, Luigi, dice, il piatto sa di sapone). Anche su Cavoletto si possono trovare istruzioni utili. Per un tè prima di Natale, per una pausa tra Natale e Capodanno, per l’ultimo regalino dolce… Una volta presa la mano sono davvero facilissime. Questa è la mia versione, ho un po’ modificato le dosi (un po’ meno burro, la farina di mandorle.. ecc). Mi pare che sia affidabile. Oggi ricetta double-face. Guardala di qua: è pistacchio, mettici il burro di arachidi è nocciolina! Sono biscotti che vengono sempre bene, l’unico problema è che la quantità di burro che non permette di abusarne. Non sono precisamente i biscotti da dieta quotidiana.
