White chocolate, almond and raisin clusters

Happy Easter everyone! Please note the three little bunnies keeping Tomik company. Aren’t they cute? I’ll blog something quickly. I went to a wedding today and everyone had to take something for the buffet. I kind of made these up taking inspiration from a Paul Hollywood recipe in which he used dark chocolate and peanuts. Anyway, they went down a treat so here they now are for your delight.

INGREDIENTS

200 gr good quality white chocolate

200 gr. almonds

60 gr. butter

150 gr. raisins or sultanas

1 tablespoon golden syrup

icing sugar

METHOD

Melt approx. 80 gr of the chocolate together with your butter and golden syrup ( I used the microwave). Break up the remaining chocolate in small pieces and roughly chop the almonds (I used the food processor). When the chocolate has melted add the rest of the chocolate, the almonds and the raisins. Stir well. Put little heaps of the mixture on a two baking trays spacing them apart. Bake in the oven for approx. 12 minutes at 180 degrees.

Let them cool then sprinkle some icing sugar on the top.
