Courgette tea bread

Hey Candi, sorry for not posting until now after all the happy hours we spent talking about this shared, dual language recipe swapping blog. I won’t bore you with the details but having to go every day to hospital is largely to blame…:-(

Anyway, I thought I would share a cake recipe here which I made for my book group ladies last week. I was hosting the event and, as the group has been running for well over three years, every imaginable cake has been made and eaten by now. They are a demanding lot these ladies – as well as very good cooks- so I scoured my personal library  for something a bit unusual. I finally found it in a very good recipe book by Rachel Allen called Bake. It’s made with courgettes, YES courgettes. It’s a bit like a carrot cake. It is certainly different and  VERY GOOD! I promise….

Here’s the recipe:INGREDIENTS
400 gr. plain flour
1/2 tsp salt
1 tsp bicarbonate of soda
1/2 tsb baking powder
1 tsp ground cinnamon
1/4 tsp grated nutmeg
1/4 tsp ground cloves
300 gr. white sugar
100 gr. demerara sugar
3 eggs, beaten
200 ml sunflower oil
2 tsp vanilla extract
380 gr grated courgettes (skin on)
75 gr chopped walnuts (I used peacans)

In a large bowl mix flour, salt, bicarbonate of soda, baking powder and spices. Add sugar and stir well. Add the beaten eggs, oil, vanilla extract and grated courgettes and mix well. Add walnuts and mix. Put in two 13x 23 cm loaf tins  and bake in the oven at 150 degrees for 1-1 1/4 hours until a skewer inserted into the middle comes out clean. Turn out on a wire rack after 20 minutes.

Comments: I used a large loaf tin, instead of two small ones and had to extend cooking time by approx. 15 minutes. I also think you could cut down the amount of sugar a little.

All in all a very good and moist tea bread. All the ladies were very impressed and asked for a second slice! Happiness all around….

    • He he! There is no difference! Americans called them “zucchini” (same as the Italian word) while in the UK they are called “courgettes”. But the vegetable is exactly the same….

    • You are asking the wrong person here. The facility was there when we set it all up. Could it be you have to upgrade your blog to the new wordpress 3.1 version??

  • @ apple iphone. This was a widget (in the Italian version called “Commenti recenti”) that was already included in our theme. We are using one of the most common wp theme: K2.
