And after the uber healthy recipe from Candi, here’s one with somewhat “naughtier” credentials. Not for people who are slimming, I am afraid.  Mind you, you can’t be good ALL of the time, can you? You have to transgress on occasions. Or how boring would life be? Plus, let’s not forget, a balanced diet is a cake in both hands, as I’ve read somewhere! Ha ha. Anyway, I made this lovely cake a few days ago for yet another book group (the Italian ladies one, this time. You will have guessed by now that I LOVE reading as well as cooking) and it went down a treat! It is made with ricotta  and lemons (the zest. Use untreated, unwaxed ones). It is really moist and utterly delicious. I found the recipe years ago in the BBC Good Food magazine. I have baked it many times and it has never failed me. And it’s so simple to make! If there are any girls out there wanting to impress without much of an effort try this one….


175 gr. softened butter

175 gr. caster sugar

3 unwaxed  lemons, zested

3 eggs, separated

250 gr. ricotta

125 gr. self raising flour

1 tsp baking powder


Beat the butter and sugar with an electric whisk until light and fluffy, then add the lemon zest, the yolks and the ricotta and stir well. Whisk the egg whites until stiff then fold in the ricotta mixture. Fold in the sifted flour and baking powder and mix well. Put in a 18 cm. cake tin and bake in the oven for 35 minutes at 180 degrees. Let it cool in the tin for an hour and then dust it with icing sugar (optional).

  • Ebbene si’, lo confesso. Io sono una di quelle ladies non magre menzionate da Lucina…. Never mind. :-)
    Ho potuto pertanto apprezzare questa gustosissima torta la sera del book club.
    E’diventata una delle mie preferite. Da leccarsi i baffi.

  • First of all: Carmelita is definitely NOT in need of a diet. Trust me! If you are not magra I don’t know who is, my dear! :-) Secondly, I think we can safely say, and not because I made it, that the cake was more appreciated than the book, judging by the discussion we had. Some you win, some you lose…:-(
