As promised here’s a quick and healthy recipe using  one of our “local” fish, namely cod. (Sorry Candi, I was getting fed up with reading your lovely recipes knowing I couldn’t get hold of the  fish you used). I made it tonight in next to no time at all and it turned out very tasty indeed. I had some home made  pesto left over from a few days ago so I decided to use it in a  context other than pasta. By the way I NEVER buy pesto in a jar. I don’t like the taste. Plus it’s so easy to make that there is really no need to resort to the ready made one.  I will add the pesto recipe at the bottom of the recipe for those English friends who have never tried it but would like (and should…he he) have a go.

INGREDIENTS

two cod fillets (approx. 400-500 gr. in weight)

half a bag of baby spinach

10-12 cherry tomatoes

1 clove of garlic, thinly sliced

4-5 tablespoons pesto sauce

80 gr. breadcrumbs

1 tablespoons pine kernels

2 tablespoons olive oil

seasoning

PREPARATION

Pour some boiling water over the baby spinach to wilt it, drain and arrange at the bottom of an oiled oven dish. Lay the two cod fillets on top of it and spoon over the pesto sauce, which should be quite liquidy (add a couple of tablespoons of warm water if necessary). In the meantime whiz the breadcrumbs and the pine kernels in a food processor. Stir the olive oil in and sprinkle on top of the fish. Add the cherry tomatoes and the garlic. Season. I suppose some black olives would make a nice addition (but I didn’t have any in the house). Bake in the oven at 190 degrees for approx. 15 minutes. It’s important not to overcook the fish or it goes dry.

TO MAKE A PESTO SAUCE

All you need to do is whiz the following ingredients in a food processor (by the way, the traditional pesto- which comes from Genova- is patiently made using pestle and mortar. I am sure the Genovese people would frown at the idea of using a food processor but what can I say? Life is too short, right?): a big bunch of fresh basil leaves , 1 clove of garlic (2 if you love garlic), 6 heaped tablespoons of grated parmesan, 50 gr. pine kernels, half a glass of good olive oil, salt. It literally takes a few minutes and it tastes delicious!!! Trust me!

  • Oh che bello, spesso capita di avanzare un po’ di pesto che non basta per condire la pasta per tutti. Ho un problema contingente. Mi si è rotto il mixer. Dovrò usare mortaio e pestello come nella più austera tradizione dei pestaioli genovesi che aborrono questo comodo/indispensabile mezzo meccanico?

  • Ma il mixer è morto morto o si può ancora per la millesima volta riattacare il pezzo mancante??

  • My advice, dear Candi??? Treat yourself to a new one. And fast! I use mine daily and would be lost without it! Unless, of course, you have hours of spare time to please the genoese pesto makers…he he :-)
    P.S. Do you do your pesto in the food processor? And are the ingredients/quantities roughly the same?

  • Sì è vero senza il mixer sono persa… Luigi lo ha aggiustato un miliardo di volte, il pezzo mancante è stato sostituito da una vite e ora aveva un’aria bislacca. Ma adesso è il motore che ha tirato le cuoia. Devo comprarne uno…
    Ahimè, per le dosi del pesto non ho idea, faccio ad occhio assaggiando via via. Ma la prossima volta (deve crescermi il basilico, è ancora stentarello) misuro tutto e così confrontiamo il processo.

  • Don’t worry Candi, my measures are approximate too! I never weigh ingredients when I cook unless it’s a cake. I have guessed the quantities myself….

  • io a foglia larga, però non sono per niente un’autorità, nonostante le vacanze a Chiavari :)
    Da quelle parti il basilico è rigorosamente dop, quello di Pra. Tra i miei misfatti annovero perfino un pesto fatto con il basilico rosso che si trova nel Caucaso (e dunque a Mosca). Ha un sapore un po’ diverso, leggermente mentato. Ma è il colore che fa impressione nel pesto.

  • ormai sono diventata anch’io un’ affezionata, infatti sto provando a cucinare varie ricette. L’altra sera ho preparato questo pesciolino ed e’ venuto molto buono! Solo una domanda, poiché e’ rimasto un po’ molliccio, volevo sapere se è giusto così o se dovevo usare un po’ il grill per renderlo croccante? grazie!

  • Forse il tuo forno non era abbastanza alto come temperatura? Comunque non vedo perché non potresti passarlo velocemente sotto la griglia!:-)
