Well…. I’m here to confirm that the blackberry and apple loaf was a success at the book group on Tuesday. All ladies enjoyed it so I won’t get evicted just yet. Here is a very straightforward stewed fruit recipe containing, as promised, my blackberry friends. It’s ideal to serve with some yoghurt or ice cream. It makes a lovely light dessert and it can be made days in advance and stored in the fridge. It’s really simple. AND healthy, for a change. You can stew some sliced peaches with the plums and add other soft fruits at the end, like blueberries and strawberries.
INGREDIENTS
1 kg of plums, cut in half, stone removed
350 ml. water
250 ml honey (or use 150 gr. demerara sugar if you prefer)
2 star anise
1 cinnamon stick
5-6 cloves
250 gr blackberries
METHOD
Place the plums in a baking dish to form one layer. Put water, honey and spices in a pan, heat up until it reaches boiling point and pour on the plums. Cover the dish with foil and bake in the oven at 180 C for approx 45 minutes. Remove from oven, add blackberries and put back in the oven for 5 minutes. Voilà. Let it cool before eating. I think it tastes even better the day after when the spices have had a chance to work their magic.
