Hello everyone, just back from my holidays in Slovenia and Italy so I am not quite in the swing of cooking just yet. I am still in a state of thermal shock after diving from 35 plus degrees to 15! Yeek! But that’s England for you. Mind you: I must say it was far too hot on the continent, even for the likes of me! Anyway, yesterday, out of the blue, I decided that the moment had come to try to make some crackers. Eh? Why yesterday and why crackers….? I have never made them in my life. God knows! Still…why not, eh? I like crackers and , let’s be honest, they are better than biscuits, from the point of view of excessive calories. I need to shed some pounds after the strudel excesses I submitted my poor body to in the past few weeks. So no more sweets for a while, and bring in the healthy crackers. I scoured the internet and ended up with a recipe which is a mixture of many. The results were quite promising:  a nice , crunchy texture with loads of omega 3 seeds on the top.  Ideal to have with hummus or cheese. I will try some other recipes in the future, of course. I will keep you paged.

INGREDIENTS

  • 230g/8oz spelt flour
  • 115g/4oz semolina

  • ¾ tsp fine salt

  • 1 tsp baking powder
  • 55g/2oz sesame seed

  • 55g/2oz poppy seed

  • 55g/2oz omega seeds (sunflower, pumpkin, ecc. for the topping)

  • 1 tbsp runny honey

  • 60 gr. butter

  • cold water

METHOD

    1. In the food processor whizz together the  flour, semolina, salt and baking powder.
    2. Add the butter and whizz till resembles breadcrumbs. Add the honey and start pouring in cold water, bit by bit until you have a medium-firm dough.
    3. Knead the dough and cut in half.
    4. Preheat oven to 180C/375F/Gas 4 (160 for fan oven). Line 2-3 baking trays with non-stick parchment.
    5. Roll the dough out to a thickness of 3mm.
    6. Using a ruler and a sharp knife or pizza cutter, cut the dough into rectangles or diamonds, of approximately 5x15cm/2x6in. Place on to the prepared trays close together, but not touching.
    7. Repeat the process with the other piece of dough.
    8. Spray the crackers with water. At this point add the omega 3 seeds.
    9. Bake the crackers for approx. 25 minutes.  Transfer to a wire rack to cool.

  • Peccato non essere lì per assaggiarli!!! Proverò a farli perché mi stuzzicano molto la curiosità è l’appetito😋

  • Voglio provarli anche io. Magari variando le farine, per usare i vari sacchetti iniziati, in fondo all’armadio e a rischio di farfalline. Il problema è che qua non vogliono che accenda il forno!!!
